 Starters :

  •              Little pots of snails, presented another way, with toasted fried bread
  •          Crumbly tart with marinated salmon and dill oil, two ways espuma, raspberry vinegar   and green mustard
  • Mozarella tomatoes and iced gaspacho, flaky pastry with sesame seeds
  • Caesar salad, chips of parmeggiano, little toasted breads with light butter, crispy bacon and anchovy vinegar
  • Rose shape melon with a few raspberries
  • Half cooked duck liver with figs slightly spiced chutney of apple and pear, toasted bun

 Fishes :

  • Pan fried shell fish, sugar peas just seized, squid ink sauce and star anise
  • Roasted royal sea bream, creamy risotto ans saffron, reduction of crustacean sauce with slightly creamed citronella
  • Salmon steak cooked one side and pistou sauce, cherish tomatoes, thyme and bell pepper

 


 Meat :

  • Free-range rolled poultry with small vegetables, famous "three purées from the convent" : broccolis, carrots, potatoes
  • Square shaped roasted lamb with sage herbs, slowly cooked vegetables in a melting ratatouille way
  • Tenderloin of Charolais beef, grenaille potatoes fried in hot olive oil, bell shaped small onions, red wine ans shallots sauce, emulsion of smoked bacon
     

 Cheese :

  • Plate of three regional cheeses according to arrivals
  • White cheese, served with salt or sugar

 Dessert :

 

  • Childhood souvenirs in small cups : chocolate mousse, rice pudding, floating island, catalan cream, pistachio solid cream, granmother waffle
  • Red fruits plate and cream
  • Red fruits variations : strawberry gaspacho, red currant panacotta, Tagada strawberry vodka, blueberry sherbet, Breton crumbly biscuit and strawberry mousse
  • Pineapple carpaccio marinated with spices, hot chocolate truffles, little glass of cream of Tonka shell bean and coco
  • The delicious effect of hot and cold : hot nougat puff with ice cream to be inserted
  • Upside down coffee cup, almond paste squares, Irish coffee
  • Milk bread 'pain perdu' style, orange flower, caramelised apple, whipped cream with Calvados
